The Weekend Cook- Wannabe: Appetizers


Cooking/ preparing meals has become so therapeutic of late. During the day = cook, during nighttime = surf and look for new bags or new things online (tell me which is the lesser evil? :D)

Anyway, I bought prosciutto, arugula, ripe tomatoes not too long ago, remember? So last week, I decided to make  prosciutto- arugula wraps. I think this would be perfect to serve to friends who come over for dinner (ok friends, this is all I’m serving when you peeps do come over HAHAHAHA)

Ok let me share the recipe or rather, preparation procedures for this one. Again, no cooking required here.  I’m a natural dumdum and I did it, and I know you peeps are a lot smarter than I, so this will be a breeze 🙂
  • 1 pack arugula or rocket ( Sorry I don’t know the weight, but it cost Php 60+)
  • 200g prosciutto 
  • 1 whole big red ripe tomato (the one I bought is soooo sweet and so good!!)
  • Hard cheese
  • Extra virgin olive oil (try making Basil Evoo– it tastes worlds better)

Deseed the tomato and cut into strips. Gather a few stems of arugula (3 – 4 depending on size of arugula), cut a small slice of cheese *try appenzeller cheese*, and one strip of tomato. Put them on the end part and on top of a strip of prosciutto and roll.

Just keep on repeating this process until the desired number of prosciutto wraps is achieved. Put each wrap next to each other on a rectangular serving plate (or if you made plenty of wraps, put them on a big round serving plate)

Voila!

Prosciutto is very salty, and I only used tomato to balance the flavor, but I find that putting one prosciutto wrap at a time on your plate with diced tomato toppings and a drizzle of basil Evoo makes it tastes SO MUCH better 😀

*Sigh* if I didn’t have to work during the weekdays, I’d seriously plant myself in the kitchen (that would make my eldest DK so happy :D). I do wish I have more free time to allow me to cook up a storm!

And oh by the way, I’m off to the beach today. Guess where I’m going? *If you aren’t on Twitter, you won’t know, so take a good guess :)*
